Unable to Customize Mannequin

I’m trying to make a few zsphere mannequins with more realistic anatomy – heads, hands, feet, etc.
But I can’t figure out how to add a single mesh (a head for example) without it turning all zspheres into heads and deleting the connector meshes.

I saw a few other posts on the topic, but they referenced old, dead links.

Any suggestions would be appreciated. Or any links to more anatomically correct mannequins for setting up scenes.
